    Default Desert Debbi: eating healthy couponing for June

    As some of you know, my DH and I are dieting. This is for two reasons

    1) His triglycerides came back as 283, when they should be in the 0-150 range
    2) I need to loose weight and so does he

    Because of this we will be changing what we buy and focusing more on what is fresh and abundant and seasonal. My savings goal will be 50% because of this, as I am realistic enough to know I won't be saving like I used to when I was getting a bunch of "junk". If its free I will still probably get it for my friends, or donations =D

    Anyways here are the stores and the rules:

    Safeway: makes all coupons under $1.00 worth $1.00 (first 3 like coupons only per day)
    Frys: makes all coupons under $1.00 worth $1.00 (first 3 like coupons per transaction)
    Albertsons: doesnt double
    Costco: doesnt accept coupons. I compare prices to safeway to determine savings, based on safeways sales/everyday prices vs costco prices.

    What does the butter lettuce taste like? I saw some at the farmer's market, but they were too pricey to just try.

    Oh, butter lettuce is so good! It wilts easily so you need a light vinegarette. Expensive but a great treat.

    Stef Buterr lettuce is amazing. I love it with tuna salad,, wardolf salad, or chicken salad, and Indianamom hit it on the nail when she said use a light vinigrette because it is delicate! Its also great as a base for a blue cheee crumbles, with candied walnuts and craisins salad =p

    Well the diet and excercise is going well. Dropped 7lbs so far and am only minorly sore after a workout. I am up to 20 minutes on the treadmill now and the ankle isnt too happy, but its liveable =D The Mayo Clinic diet is pretty easy to follow and stick to. I thought it would be alot harder than it is. Anyways, did some shopping at Safeway this week. The Just for U program is live in my area now and I am loving the way it is oriented towards MY shopping habits. Especially on items like fresh produce! While I do love Costco, its a little intimidating to have to buy so much stuff at once and to USE it before it spoils!

    My mom is finally here, and there will be alot more shopping showing as a result! Even though she likes to "help" I still have things I need to get which I won't let her pay for and visa versa. So my groceries until she leaves will be a little lopsided looking I am sure! Also I expect them to be meat heavy as I have a whole freezer full to restock.
