    Thumbs up Dinner tonight was stuffed Bell peppers

    While I have probably posted a similar recipe I could not find it. I did notice all the old recipes are locked threads, I pray they are never deleted. Many of them were created off the top of my head and are not written down anywhere except in those threads. Anyhoo!

    1.3 lbs lean ground beef (commissary packages all ground beef in 1.3 lb size)
    6 green bell peppers, seeded and halved
    salt, pepper
    diced onion
    minced garlic
    1 can hunts roasted garlic and onion sauce-- 24 oz can
    oregano, thyme, parsley--whatever italian seasonings you have
    about 1.5 cups dry brown rice, this was estimated, I used what was left in the bag
    kraft parmesan
    shredded mozzerella
    italian seasoned breadcrumbs

    First off, unless you like seriously crunchy bell peppers like I had tonight, heat the oven to 350 and roast the 12 halves of bell pepper while you cook the meat mixture, about 20 minutes. Use a 9x13 pan.

    Brown the meat with the garlic and onion. Meanwhile cook your rice on stove or rice cooker (best way!), and add a pat of butter. Back to meat: add seasonings, salt and pepper. Add sauce and simmer on low heat until the rice is cooked. Add rice, some parmesan cheese, and about half a cup of mozzerella.

    Spoon portions into each bell pepper half, top with a spoonful of breadcrumbs, and bake at 350 for 20-25 minutes. During last 5-7 minutes take the dish out and put a pinch of mozzerella on each pepper. This serves at least 6 people. Or you can freeze half of them and heat another night!

    Yummmm! I love stuffed bell peppers more than life itself. (though I would substitute red/orange/yellow for the green since they're sweeter and tastier)

    Oh my goodess that is a lot of work. I guess I make a quick version in the Crockpot.

    Crockpot Stuffed Peppers
    1.25 lb ground beef, raw
    1 cup rice, uncooked
    2-3 Bell Peppers (I used yellow)
    salt and pepper to taste
    1 Can Diced Tomatoes 16 oz
    1 Can Water, 16 oz
    1 Can Tomato Soup

    Mix raw ground beef, uncooked rice, and salt and pepper together. Cut peppers in half and stuff with meat mixture. Place in Crockpot. Mix together: tomatoes, soup, and water. Pour over peppers in Crockpot. Cook 6-8 hours.

    I was going to say the same thing. I make mine in the crockpot with almost the exact recipe. It's so easy, cause you don't have to cook the meat or the peppers, just throw it all in. I omit the tomato soup and just use the canned tomatoes. Also you can easily make a "southwest version by using taco seasoning in your ground beef, corn, rice, black beans, and onions stuffed in the peppers and with cheese and canned tomatoes on top.
