LOL! My sister makes a Green Goop (Mint Crunch is official name).

I don't remember the recipe in it's entirety because it has Creme de Menthe in it and I can't have it. But, it takes Cool Whip, Pistachio pudding, milk, mini chocolate chips and Creme de Menthe... maybe something else, can't remember... but it's a huge hit every time!

I can't seem to locate any of my old recipes so I'll be reposting as I made them.

    Easiest Coleslaw

1 shredded head of cabbage (or TWO bags of shredded cabbage mix)
    1 cup mayo
    1/3 cup sugar
    1/4 cup apple cider vinegar
dash salt, pepper, or celery seeds

Mix all ingredients, marinate 2 hours or overnight.

This takes 2 minutes to make. Halve the recipe if you are only making withg 1 bag of shredded cabbage.

    No Fuss Lemon "Mousse"

    1 pkg softened cream cheese
    1 can sweetened condensed milk
1/4 cup lemon juice.....bottled stuff is fine...to taste

Mix till creamy. Best over a homemade graham cracker crust and chilled. Makes a very pretty individual dessert pudding sprinkled with finely crushed graham crackers.....think wine glasses or china cups.

    Stuffed Pepper Casserole.....for the CrockPot

    1 Cup dry rice
    1 lb hamburger...browned and crumbled
2 Bell Peppers, chopped....I prefer the orange ones
1 onion chopped.....best if you brown the onion with the HB meat
    1 can tomato soup
    season to suit you

Put rice, Hb onion mixture, peppers in crock pot. Add enough water to cover the rice and top with soup......turn on and leave it alone till everything is done. Depending on the rice you use, you may need to add more water if it seems dry. Adjust your amounts for your family size.

I love a one pot meal......esp in summer.

    Fresh Lemony Salad

    Baby spinach
    Diced tomatoes
Cooked and cooled (cold) lentils (boil for 20-25 minutes in a pot of water, drain, refridge for 3 hours)
Freshly shredded Monterey Jack cheese (or other mild white cheese)
    Shredded, sliced roast beef

    Dressing:
    1/3 cup olive oil
    1/3 cup vinegar
    2 TBS lemon juice
    1 TBS dijon mustard
    Pepper
Italian seasoning (It called for rosemary but I don’t have any!)

You are supposed to set up a tray with the separate ingredients but I just layered into our bowls. Would be nice for company though.

Since it's SOOOOOO hot outside and I'm itching to make some treats... what's your favorite "no oven" treat? I'm looking for something a little different than No Bake cookies and OHenry Bars...
