    Default "I refuse to throw these leftovers away", vegetable soup

    I had bits of this and that left over, so I made soup for lunch.

    Leftover broth from a crock pot pork roast. (This was seasoned and had onion in it) I had chilled it and skimmed off the solidified fat.

    One cup tomato juice in the mason jar.

    1 and 1/2 cups mixed veggies each from a different meal..(carrots, corn, green beans.

    1/2 cup leftover brown gravy.

    Mix all together, heat and eat. Yummy.

    Maybe you can give me a suggestion. DS21 just bought a juicer and he loves using it. He has been buying all kinds of veggies and making all kinds of really gross looking fluid. There is so much solid material left after the juicing and he keeps saying it is a shame to throw food away. He wants me to research recipes for using it in like broths or soups or whatever. I have no interest in his new little hobby because I am really sick of cleaning up his mess and all the parts all over my kitchen.

    My suggestion would be to tell him if he leaves a mess for you to clean once more, you're throwing the dirty parts in the trash.

    My Little Granny always kept a container in the freezer where she put whatever was left over all week........meats and veggies. Sunday night, after church, she would pull out what the grandkids called her Witch's Pot and put all the leftover whatevers in for soup for lunches till it was gone. She called it Hobo stew.
    It's a wonder we didn't all die of food poisioning.......I don't ever remember the Witch's Pot going in the fridge, but we all survived.
    Use it up...wear it out, that was her motto.

    I juice everyday! I also have a garden, so I use the fiber left over (the pulp) in compost. I also started a worm bin, and feed them the pulp too.

    I have been known to make "confetti rice".... steam up your rice, and mix in carrot pulp and toss in some veggies. You could also use some of the pulps in dips (make a garden dip) or add it to soups for added fiber. I would think you could use it in breads....but truly, it is the fiber that is left, not a terrible amount of flavor.

    Also, I'm not sure what juicer model he uses, but running the pulp through again sometimes gets enough juice out to be worth the while.

    I used to keep my tidbits in the freezer too, but I'd always forget about them until they were freezer burned. Now I just leave everything in the fridge and use it before it goes bad.

    Shallen, When I have oranges drying out, I scoop out the flesh and use it in muffins. I have a pumpkin muffin recipe that I switch the pumpkin out for whatever fruit needs using up. Bananas work well too. Maybe try using the leftover pulp this way. You might also try fruit pulp in smoothies or jello molds. Veggie pulp you might try mixing into meatloaf, savory muffins or breads, or even spaghetti sauce. Experiment, you might find something really good.

    Thanks Janni all good ideas. I love meatloaf but no one else will eat it around here. I have to bake GF so I don't do much anymore because it is a PITA. I could use the orange pulp in an orange chicken though. I also like the smoothie idea. I may try a stew with some of the veggies and I could always hide carrot pulp in something. Keep those ideas coming!

    Jako, I have no idea about juicers but he said he spent 200.00 on it so I hope it would be a good one. I will tell him to rerun the pulp. He has become a regular at aldi now too.
