I grilled these for the family last night. Everyone raved about them. My FIL, who doesn't like the breast part of the chicken, said it was the best chicken he had ever had!
1 tablespoon paprika
4 teaspoons sugar, divided
1 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 tablespoon Tony Chachere's Cajun seasoning
1/2 teaspoon cumin
4 boneless, skinless chicken breast halves
1 1/3 cups mayonnaise
2 tablespoons water
2 tablespoons cider vinegar
a pinch of pepper
In a small bowl, combine paprika, cumin, 1 teaspoon sugar, 1 teaspoon salt, garlic powder, poultry seasoning, and the Tony Chachere's; sprinkle over both sides of chicken. Set aside. In another bowl, combine mayonnaise, water, vinegar and remaining sugar, salt and pepper; cover. Chill 1 cup for serving. Save remaining sauce for basting.
Grill chicken, until browned and juices run clear. Baste with remaining sauce. Serve with reserved chilled sauce.
My family would want more sauce the next time I make this. I think they like to dip! I served this with Pureed Parmesan Potatoes and Poppy Seed Cole Slaw.
