OK my recipes start to get redundant after a while. lol My tortilla soup is almost the exact same as this. With some pantry/refrigerator staples you can really do alot with the same few things. Serves 6
Family pack bone in chicken thighs, skins/fat trimmed
1 packet taco seasoning (or use your own mixture of oregano, cumin, chili pepper)
1 can diced tomatoes with juices
1 can corn, drained
1 can black beans, drained & rinsed if you desire (rinsing ensures they have less sodium, but you dont have to do this)
1 can sliced black olives, drained
diced onion
salt/pepper
Cooked white rice or tortillas on the side, shredded cheese, sour cream, tortilla chips also
Place chicken thighs in crock pot, cover with taco seasoning. Add all canned ingredients, onion, salt and pepper. Cook on high 4 hours, or until the meat is done and falling off the bone. I also thickened a little with cornstarch and water about 30 minutes before it was done. Serve alongside white rice or tortillas. Add cheese and sour cream to each serving and tortilla chips if you want. You could even add a diced bell pepper in the beginning. If you like it kicked up you could add hot sauce or salsa even in the beginning.
