    Default My own Broccoli Cheese Soup Recipe

    HI all. Been a long time since I had a new recipe! Its simmering now, it smells wonderful! I just browsed a few recipes and created my own.


    Broccoli Cheese Soup

    2 large broccoli crowns, chopped, including some stem
    2 tbsp butter or margarine
    diced onion
    1 minced garlic clove
    pepper to taste
    1 can cream of potato soup
    1 can cheddar cheese soup
    2 cans milk
    half can chicken broth (or whole can, depends on how thick you prefer your soup)
    shredded sharp cheddar cheese


    Start by sauteing the garlic and onion in butter. Add chopped broccoli. Cook a few minutes. Add both cans soup, and 2 cans of milk. Stir and add the broth. Add the pepper to taste. the cheddar cheese soup should be salty enough but you can add salt if you need to. Simmer until broccoli is soft enough, about 15-20 minutes. Add shredded cheese, and cook a few more minutes. You can stretch this soup by adding more soup and milk, or even some frozen shredded potatoes. Add ham cubes for a meal!

    I am going to try this !!! It sounds soooooo yummy !!!!! I wonder how well it would do in a bread bowl???

    Oh my I think bread bowls would be divine! This recipe was SO delicious and easy to make! If you're on a diet, replace the cream of mushroom with the healthy request version, use skim milk, and skip the cheese soup and just use real cheese instead. Low sodium chicken broth. Surely you can get away with it, with portion control.
