Cut some up throw them down the garbage disposal, switch it on (while running the water). Them follow with some ice cubes. This freshens and keeps the blades sharp.
They are great in tea with some honey.

If these are organic lemons or not exposed to chemicals (like picked from a neighbor's tree), you might want to wash some and then grate the skin to make lemon zest.
Use parchment or waxed paper on a cookie sheet under your grater and lightly grate off the yellow part only. Then spread evenly into one layer and put in freezer to dry. After a couple of hours use the waxed paper to make a funnel and pour the zest into a small jar with tight lid. Put in freezer for future use in cakes, cookies, tea, etc., etc.!
I usually put in a small silicone baggie thing (usually found in a shoe box or as packaging material to soak up moisture) in with the zest to keep it from absorbing freezer odors.
This zest can be added to dry spice rubs, salad dressings, salsas, etc. to "wake-up" the other flavors or used as a sprinkle on cupcakes, deviled eggs, pancakes and the like for a bright burst of flavor and to add color to the dish.

I would slice them in half and eat them with salt! Other than that, what about juicing them and freeze the juice in ice cuhe trays to use in recipes later.
