Default Need a fail proof recipe

For Tofu. Does anyone have an easy, fail proof recipe that I can make that the whole family will like (DS who is 20mo, DD6, and DH of course!) Looking to incorporate this in our meal plan once a week or so (for something different) I LOVE the 7 spice tofu that is in PF Changs veg. lettuce wraps but all the tofu I buy (even the Extra firm) seem mushy to me! How can I make it more firm?? Thanks!

I freeze the tofu then thaw it and press as much water as I can out of it. Cut it into cubes then, I dip it in soy sauce and brewers yeast and fry it in a deep fat fryer. My kids eat it like chicken nuggets(of course my kids are 33 and 30). You can marinade it and bake in the oven with BBQ sauce. Or you can roll it in seasoned bread crumbs and fry it like fish sticks and make mock fish tacos.

My personal favorite is to make it like chicken salad. Squeeze as much water as you can out. crumble it up add all the salad ingredients, plus some poultry seasonings, salt and pepper.....YUM.

my sister made tofu scramble (basically scrambled tofu and veggies and salsa) she mushed it through her fingers before cooking it. Put it all in a 10 inch skillet and cooked it until it firmed a little then simmered it to help get some of the water out. It was the same consistency as scrambled eggs.

We love making tofu stir fry. Easy stuff! Just get the firm tofu, cut it into blocks, and sautee in a pan with some sort of sauce (Kikoman teriyaki sauce is a good one to use). Add veggies and more sauce and cook until veggies are done, then serve over rice.

We have 2 favorite tofu dishes. The first is tofu parmigiana. It is really easy. Tofu Parmigiana Recipe - Allrecipes.com I use homemade pasta sauce instead of the tomato sauce/herb mixture they create.

Our other favorite is tofish tacos. I got this recipe from a friend. Here is a similar link Baha Tofu Tacos with Cilantro Cole Slaw We use olive oil instead of vegetable oil for the tofu rub and slaw. We also drain the tofu first by wrapping it in paper towels and putting a heavy can on top of it for about 10 minutes. The recipe calls for 4 cups of oil for frying, but we use a lot less. Oh and we dip the tofu in flour, milk (not yogurt), then the panko. The slaw is awesome! It definitely makes the meal.
