Default Cooking is one of my passions! Ask me for recipes anytime!

Hey I love to cook, so if you want easy recipes just ask.

Here is a super easy recipe. Cream of mushroom chicken over rice.
Some of you may alread know it, if you don't, give it a try!

Pre-heat oven to 345, 375, 400, whichever you think woks best for cooking chicken in your specific oven.

Get some chicken thighs or legs, or whatever you prefer. Sometimes buying the whole chicken and cutting it up yourself is cheaper.

    Then remove the skin.

Put the chicken in some kind of long oven safe pan or whatever you normally use.

Pour some condensed cream of mushroom soup over the chicken. Then add some canned chicken broth if you have some, otherwise water is ok.

Just eye ball everything, you don't want it too thick, or too watery, it will condense and thicken as it cooks.

Then put foil around the entire thing, and cook it. You know best how long chicken cooks in your oven. Try half an hour, then pull back foil to see if its cooked.

Once chicken looks cooked, remove the foil and cook another 15 mins. Now without the foil the top of the chicken and soup will brown up, yummy. Aslo if you had put too much water, it will condense down. If you didn't put enough water the first time, add some more now and let it golden up for 15 mins. Keep an eye on it!

Next, make some rice or instant rice, whatever you like. Serve the chicken over rice, and pour some of that yummy warm creamy soup all over the chicken and rice.
*add salt and pepper to your liking!

My mom uses to make something similar. We always liked it around our house.

I make a similar casserole (actually making for my hubby tonight, I am vegetarian so won't eat it!)
    1 cup uncooked rice
2 cans condensed soup (I use cream of chicken and cream of mushroom)
    1 can milk
mix all of those ingredients up and pour into 9x13 casserole dish (I spray it)
Place a few chicken breasts on top and then sprinkle a packet of onion soup mix over.

Cover with foil and bake for 90 minutes @ 325.

I will have to try your recipe on my husband~

I've got a challenging request for you: a good chicken or beef recipe that doesn't involve an oven or crock pot! Our oven here is kaput and we don't own a slow cooker. Thank you for any help.

Nerdy, what happened to your slow cooker? Didn't you pick on up about 2 years ago?

Yes, M, but when I moved from SC to GA I donated it to Goodwill along with 13 boxes of stuff.

^^ gotcha, I thought I remembered you picking one up. You'd made chicken with Kraft Asiago something dressing. I tried it and it was fabulous!
