keilbasa stew ( My mother's recipe)
2 packages of Smoked Sausage or Keilbasa (I use the ones you get on sale, my freezer is full of them)
2 1/2 lbs of potatoes peeled and cubed
1 lbs of Carrots, Peeled and chopped
1lbs of Celery, wash and chop
1 medium onion, sliced or chopped.
2 Garlic Cloves or 2 Tbsp of Garlic chopped
Don't use a whole lot of salt in this, keilbasa has good flavor, just enough saltyness, and pepper to your descresion.
1qt of Chicken stock, rest fill about an inch or 2 over the veggies and Keilbasa.
On high til it comes to a boil, bring it down to medium heat or medium low, and let simmer for about 2-4 hrs.
let it condense and breakdown.
It's a soul warmer recipe. I make it when we are tight on the budget. It lasts 4 people for about 3 days.
