    Default Slow Cooker Tuscan Bean Soup

    I made this the other night. Both my hubby and I enjoyed it.

    1 lb. small red potatoes - about 3 cups cut into quarters - used regular potatoes and cut into chunks
    4 medium carrots, sliced (2 cups)
    1 medium onion, chopped (1/2 cup)
    2 cloves garlic, finely chopped
    2 cans (15-16 oz. each) great northern beans, drained, rinsed
    2 cans (14 oz. each) chicken broth
    2 cups diced fully cooked ham - I used 3 Basil & Tomato chicken sausage as it is what I had on hand
    1 teaspoon Italian seasoning
    1/2 teaspoon salt
    2 tablespoons chopped fresh parsley
    1 tablespoon olive or vegetable oil

    1. I took the skin off the sausage and then cut it in slices. I browned it in a fry pan.
    2. In 3-4 qt. slow cooker, mix all ingredients except parsley and oil.
    3. Cover, cook on low heat setting 8 - 10 hours.
    4. Stir in parsley and oil before serving - I did not do this - saw no reason to do it.

    If you have a large family, you may want to make a bigger batch. We used it for our main meal along with some nice crusty bread.
