    Default Ideas for leftover pinto beans

    I made a pot of pinto beans and would like to stretch them. Any ideas would be great

    Breakfast- melt 1 Tablespoon of butter add beans to the pan and mash (refried beans), add seasoning to taste. Serve with eggs and tortillas or make breakfast tacos with egg and ham.

    Lunch- refry them and make nachos, add cheese and sour cream.

    Dinner-fry tortillas flat in oil and lay on paper towles to remove excess grease. Spread refried beans, ground beef, cheese, or what ever you like to make tostadas.

    Texas Rice & Beans:

    4 T shortening
    1 large onion, diced
    1 # ground beef
    2 T. chili powder
    2 t. black pepper
    2 cups (or however many you like) of pinto beans
    1 can diced tomatoes
    1/4 t. garlic salt
    2 t. salt

    Brown meat & onions in shortening. Add dry seasonings, beans & tomatoes. Cook on low heat about 30 minutes.
    Serve over rice.

    I usually serve w/ cornbread or broccoli cornbread

    My family has been serving and eating this for years!! It's an adaptation of a recipe in the Typically Texas Cookbook published in 1970 by the Texas Electric Cooperatives, Inc. I got my cookbook passed down from my grandmother, but my mom has one as well! It's one of the best cookbooks I have ever used!! Hope you enjoy! It's super easy to make!

    Make a mexican stew. Cornbread with added meat and cheese and beans. Bean dip for snacks. Beans and rice meals are hearty.
