I am making this for MOPS tomorrow. We do brunch type foods. It so easy and versatile. This time I just used sausage and cheese.


1 bag slightly thawed, frozen, shredded hashbrowns
1 can cream of mushroom soup
1 can milk (tonight I used a partial can of evaporated milk I had leftover)
1 cup shredded cheese
your choice meat: ground cooked sausage, cooked cubed ham, etc.
your choice additions: diced cooked onion, green bell pepper, corn, mushrooms, etc.


Leave the bag of hashbrowns to thaw on the counter for about an hour or two. If you use solid frozen it will never cook.
Spray a 9x13 pan with Pam, and preheat your oven to 400.
Pour the hashbrowns into the glass pan. Add cheese and other additions, ham and corn is good together too.
Whisk together the soup and milk in a bowl and pour over the casserole. Mix well. Bake for about an hour at 400. This can be made ahead, refrigerated, and reheated. Its great that way too. Turn it into dinner by adding chicken or turkey and vegetables. Super easy and yummy.
