    Default Black Bean and Rice Burritos

    Easy, tasty, healthy and cheap!


    1 15 oz. can black beans, rinsed and drained
    1 14 oz. can diced tomatoes
    2 cups cooked rice (plain, Mexican, any kind will work really)
    12 six-inch tortillas
    Spices to taste (garlic, cumin, etc.)
    Salsa and shredded cheese (optional)

    Preheat oven to 400 degrees. Mix everything together except the tortillas, shredded cheese and salsa. Fill tortillas with mix (do not overfill), fold, and place seam side down in baking dish sprayed with nonstick cooking spray. Sprinkle with shredded cheese. Bake for 12-15 minutes. Top with salsa if desired.

    Yes, I really liked them baked. Crunchy but not hard, and melty cheese!

    Making similar to this this weekend. I'll add some diced chicken and use Zatarain's black beans and rice mix, Rotel tomatoes, a little sour cream. Refried beans and rice on the side. Extra tortillas are quartered and cooked in butter, sprinkled with sugar and cinnamon. Very easy to make and extremely tasty.

    P.S., if you make more than you eat at the time, they reheat well at 300 degrees for 8-12 minutes.
