This is what I'm making now.
6 cups water
3 tsp chicken bouillion
pinch oregano, parsley, and cumin
salt/pepper
1 clove minced garlic
1 tbsp butter
diced onion
1 diced bell pepper
1 can each of diced tomatoes, drained black beans, drained corn
1 cup diced leftover roast chicken
1/3 cup Pace chunky medium salsa
taco shells, broken up (I'm using Ortega)
shredded cheese/sour cream/cilantro for garnish
Heat 1 tbsp. butter in a large soup pot. Cook garlic, onion, and bell pepper a few minutes, until onion is clear. Add water, bouillion, and spices. Add tomatoes, drained can beans, drained can of corn. Add chicken. Add 1/3 cup salsa, or more if you prefer. Simmer about an hour. Add the taco shells and garnish to each bowl when serving.
