I modified this from two recipes. Its baking now, will let you know if it turns out good!
1 cup all purpose flour
1 cup whole wheat flour
1/3 cup evaporated milk (you could use regular milk I'm sure or buttermilk)
1/3 cup sugar plus 2 tbsp.
1 generous tbsp brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt (I used unsalted butter)
1/2 cup butter (1 stick)
2 eggs
3 ripe bananas
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup chopped walnuts
Cream butter and sugars. Combine flours, baking soda/powder, salt and add to sugar mixture. Add cinnamon and nutmeg. Mix a little. Add two eggs beaten, milk, and mix until well combined. Add ripe bananas. Mix well. Last add walnuts and fold in. Bake at 400 for 15-18 minutes.
**I'm thinking I should have added a few tablespoons of oil to moisten it up a bit. Oh well.This was adapted from a banana bread recipe and a blueberry muffin recipe; I have made both successfully.
