I always use the soup mix when cooking my roast in the crock. Also add the pots & carrots when the meat is almost done. I also mix a little cornstarch & water together and pour into the juice at the end to thicken for gravy....yummy!!
Another idea...use cream of mushroom soup

I take a beef bottom roast, sprinkle it with 2 pks of Italian seasoning, and 1 c beef broth. I put it on low all day. About an hour before I am ready for dinner, I shred the meat and pour in a 16 oz jar of peppercinis and mix together. Serve on a big kieser roll with provolone cheese on top. Yum.
Also, I have put on in the crockpot with onion soup mix sprinkled on top. Put in carrots, onions, and potatoes. Let cook on low for eight hours.

I usually season and flour my roast first and fry in a pan of oil (just to sear the outside and flavor the oil) put in crockpot, add carrots, potatoes and onions and make my gravy from the pan of oil and pour over everything (I do this so I dont have to worry about making the gravy later but it will get watery if your gravy is too thin!). You can add a small amount of coffee to the gravy, a cream of mushroom soup, etc.. the possibilities are endless! Cook on high for 6-8 hrs or low for 10-12 hrs. Roast falls apart! I Can't wait to read what others post so I can get a different spin on mine!
cut small slits diagonally into roast with knife tip; these are just big enough to fit garlic slivers then coat with peppered apple cidar vinegar (just peppers boiled in ac vinegar and stored, amount of pepper depends on spice preference).
season with season all, coat with evoo, and pan sear on all sides (sear gives meat its flavor so sear 3-5 min on every side.
place in crock pot on high till tender (no holes in lid), turn every hr. till pulls apart by turning.
once soft remove meat and cook any veggies in juices till tender (i like thick gravy and add tbl cornstarch)
stopped at the produce market got red potatoes, garlic, carrots, onion 2.01 not bad then the lipton mix wish me luck thanks for the recipes, I will brown the meat first in flour.. I feel so guilty no coupons, it was funny when the manager at publix said WHAT no coupons...........![]()

French Dip Sandwiches
1 3-1/2-4 lb. boneless chuck roast, trimmed
1 beef bouillon cube
1/2 c. soy sauce
1 bay leaf
3-4 peppercorns
1 tsp. dry rosemary , crushed ( or fresh)
1 tsp. thyme
1 tsp. garlic powder
12 French sandwich roll,split
Place roast in crock pot. Combine soy sauce and next 6 ingredients and pour over roast. Add water to cooker until roast is almost covered.
Cook, covered on low 7 hours or until tender. Remove roast reserving broth; shred roast with fork. Place roast on rolls and serve with reserved broth for dipping.
I also like to saute mushrooms bell pepprs ,onions ,add cheese And toast The bread
Potatoes and carrots go in 20-30 minutes before you serve, depending on how big you cut them, and what texture you like them. Remember Potatoes soak up salt, so check before serving for flavor/saltiness.

My roasts are pretty simple. Add roast and water. Add 1 stick of butter. Cook for 6-12 hours. Add taters and/or carrots and/or whatever an hour before serving. I cook down the juices until it will all go in my large planters nuts jar and later use the juices with the leftover beef for beef n noodles.
