As always, I found this on Taste of home, but added cinnamon and ground cloves. I also used craisins, but you could use fresh chopped cranberries too. This recipe is for 2 batches, 1 for now, 1 to freeze for later.
The original recipe had chopped pecans, I didn't have any so I omitted that part. P.S. Craisins are coming up bogo the week before Thanksgiving.Cranberry Orange Spice Muffins Recipe 4 cups all-purpose flour 3/4 cup packed brown sugar 3/4 cup granulated sugar 1 tsp cinnamon 1/2 tsp ground cloves 4 teaspoons baking powder 1/2 sp salt 4 eggs 1 1/3 cup orange juice 2/3 cup vegetable oil 1 bag Craisins Directions In a large bowl, combine flour, sugar, spices, salt, brown sugar and baking powder. In another bowl, beat eggs. Add orange juice and oil; stir into the dry ingredients just until moistened (batter will be lumpy). Fold in cranberries. Spoon into 12 greased or paper-lined muffin cups (cups will be almost full). Bake at 375° for 20 minutes or until golden brown. Remove from pan to cool on a wire rack, repeat with second batch. Yield: 2 dozen.
