Default Chocolate Truffles

The mint recipe got me thinking about how my sister in law always makes wonderful candy around the holidays. So I searched....and found this recipe.

Chocolate Truffles

Ingredients:

•1 lb. good quality chocolate chips (I used Ghirardelli – ˝ semi-sweet and ˝ bittersweet)

•1/2 pint heavy whipping cream

•1 tsp. vanilla extract (or other flavoring – mint extract or almond extract or cinnamon)

•things to roll truffles in: cocoa powder, powdered sugar, chopped nuts, sprinkles, coconut, be creative!

Directions:

1.Melt chocolate chips and heavy cream in a double boiler.

2.Remove from heat and mix vanilla (or other flavoring) in.

3.Put in fridge to cool.

4.When totally cooled and solidified, spoon out balls and roll in your hands.

5.Roll in whatever coating you desire. Store in an airtight container in the fridge.

People think that making Truffles is a lot of work and difficult. But it's NOT! I used to teach a class on truffle-making and everyone was soooo happy with how easy there were and how fabulous they turned out. Here's an even simpler recipe and they are INCREDIBLE!

Chocolate Hazelnut Truffles
1 13oz jar Nutella
4 squares (4oz) semi-sweet baking chocolate

Refrigerate Nutella about 4 hours until firm. Scoop VERY small balls onto parchment lined cookie sheet. Freeze until firm.

Melt chocolate in microwave. Dip Nutella balls into chocolate. Return each one to cookie sheet. Refrigerate until chocolate is set.
Makes 2 dozen truffles

You could roll them in sprinkles, nuts, etc. if desired. These are SO RICH. One year I gave them to all my friends. I placed each one in a pleated paper mini-muffin liner, then put tissue paper into a tiny dollar-store card-stock handled bag (in the wedding supplies section -- don't know what they're called.) Each friend got ONE truffle (I gave each person another gift besides. ) They loved them!

btw: the recent CVS ad with the picture of the "World's Largest Reese's Peanut Butter Cups" got me to thinking that we could make our own for gifts. I have a great recipe for HM PB cups. We will make them in tart-sized pie tins. YUUUMMMMM!!!!! I'm makin' these with dark chocolate....

I have a recipe for truffles that I just made last night.

Balsamic Chocolate Truffles.

~8oz chocolate (should be dark, but I mix 1/2 and 1/2 dark to milk.
1/4 c cream
~2tsp balsamic vinegar
~1/4c cocoa powder ( I usually mix in a little confectioners sugar too)

melt chocolate on a low dbl boiler. add cream
remove from heat add balsamic
refridgerate until hard ~1 hr
sit at room temp ~2hrs ( I usually skip this step so it's not so messy when I am rolling it.)
Roll into balls 1/4"-1/2"
roll balls into cocoa or confectioners or nuts or whatever you like.

These are super easy and AWESOME!!!

Easy Oreo Truffles from Kraft.

What You Need!
1 pkg. (1 lb. 2 oz.) OREO Cookies, finely crushed, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted
Make It!

MIX 3 cups of the cookie crumbs and the cream cheese until well blended. Shape into 42 (1-inch) balls.

DIP balls in melted chocolate; place on waxed paper-covered baking sheet. (Any leftover melted chocolate can be stored in tightly covered container at room temperature and saved for another use.) Sprinkle with remaining cookie crumbs.

REFRIGERATE 1 hour or until firm. Store any leftover truffles in tightly covered container in refrigerator.

How to Easily Dip Truffles
To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Then use two forks to roll truffles in chocolate until evenly coated. Remove the truffles with forks and allow excess chocolate to drip back into bowl before placing truffles on prepared baking sheet.
Special Extra
Sprinkle truffles with colored sugar or sprinkles in addition to or in place of the cookie crumbs.
How to Soften Cream Cheese
Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.
