Default Chicken corn chowder

Someone posted about this soup in the 'savings and success' section, I had to try to make my own! I used a base recipe for baked potato soup, and jazzed it up.


2 peeled diced potatoes
2 sliced carrots
2 chopped celery stalks
1 small diced onion
5 slices bacon, chopped (about half a package)
pepper
1/4 to 1/3 cup flour
1/4 tsp. dried dill weed
1/2 tsp or so chicken boullion granules
1 can chicken broth
2 cups milk
leftover shredded roast chicken
1/2 cup frozen corn (or canned or even creamed would work)
shredded cheese

1. In a large pot, cook the bacon until crisp. Remove bacon to dry on paper towels, and add the onions and celery to the bacon grease. Saute until tender. Add the pepper, dill weed and flour, making a rue (sp?).
2. Add chicken broth , stirring to thicken. Add boullion granules, milk, potatoes, and carrots. Add about half the crisp bacon. Simmer for awhile, add chicken and corn.
3. Simmer until potatoes are tender and soup is nice and thick. Top with the rest of the crumbled bacon. I might even throw in a little shredded cheese.

Sounds yummy! I make this too, but I don't use a recipe...just throw in this and that until it tastes right, I know, not very helpful for repeat success but it always turns out great. I like starting off with a roux as well, helps to thicken the soup up a bit! Add pepperjack cheese to it if you like it spicy! yum!

Yes I threw it together but approximated the measurements here. It was good.

Thanks for posting! I modified slightly with what I had at home, I used 2 cans of chicken broth, 1 can evaporated milk, 1 can of potatoes, 1 can of corn, 1 can of carrots (all wre really cheap or free), and italian seasoning and tarragon since I did not have dill. It came out great!

I printed this recipe - it sounds so yummy! Next time I make chicken matzo ball soup, I will save some chicken and make this recipe. Thanks for the post!

Oh yeah... very similar to mine except, I don't use flour... I use potato buds to thicken. And I put my potatos in with the celery and carrot. (it speeds up the cooking time) and at the end I "finish" with cream or milk.

This sounds very good....hmmm.
