Default Sweet potato apple bake

I made this Sunday for a potluck. It has a crumb topping, very much like apple crisp. Could be a side dish or dessert. We ate it as a side dish. Perfect for the holidays.


Ingredients:
2-1/2 pounds sweet potatoes
1/2 cup packed brown sugar
1/3 cup chopped walnuts
1/2 cup rolled oats
1/2 cup flour
1/4 cup cold diced butter (1/2 stick)
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 cups thinly sliced peeled tart apples
2 tablespoons butter

Directions:

Place the sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Drain. When cool enough to handle, peel potatoes and cut into 1/2-in. slices.
In a small bowl, combine the brown sugar, walnuts, cinnamon, salt, flour, and oats. Cut in cold butter until mixture resembles coarse crumbs; set aside. In a large skillet, saute apples in 2 tablespoons butter for 3-4 minutes or until tender. In a greased 1-1/2-qt. baking dish, layer half of the sweet potatoes, apples and brown sugar crumb mixture. Repeat layers, using most of the crumb mixture on top.
Cover and bake at 375° for 30 minutes. Uncover; bake 15 minutes longer or until bubbly. Yield: 6-8 servings.

oh yummy....two of my favorite flavors....apples and sweet potatoes....I'm going to have to try this.

Sounds delicious
Have to write that one down & try. Anything with sweet potatoes is a hit around here! Thanks for the recipe .
