Anyone got a good recipe? I went to the Tyson website and used some of theirs (with great success), but I still have about 10 more in my freezer! HELP!

oh yum. cornish game hens can be tricky because they are so small it's easy to let them dry out before you know it.
2 (1 lb.) Cornish game hens seasoned with salt, inside and out In small pan saute 2 tablespoons almonds, 2 tablespoons onion and 1/3 cup long grain rice (uncooked) in 3 tablespoons butter for 5-10 minutes, stirring often. Add 1 cup water, 1 chicken bouillon cube, 1 teaspoon lemon juice and 1/2 teaspoon salt. Boil and cover 20-25 minutes or until, rice is fluffy. Stir in a 3 ounce can of mushrooms. Lightly stuff birds. Place breast side up on rack in shallow pan. Brush with melted butter. Roast, covered at 400 degrees for 30 minutes. Uncover and roast 1 hour more until leg twists easily. (If you don't have almonds, or have a nut allergy you can omit these)

make an herb butter. soften it at room temp. add some dry herbs, thyme rosemary, sage whatever you like(if you fresh,even better) mix it together real well. loosen the skin abit, even to get your fingers under it. spread some of the butter under the skin and some all over the hen also(not to much on the outside because they're so small. It cooks up so moist and it tastes so good. I use the herb butter for turkey, chicken, sometimes over fish. Don't forget you can use any kind of herbs you like, whatever butter is left roll it into a log and wrap it in plastic wrap and pop it in the freezer. Cut off a slice when you want to use it. put a slice of it ontop of a steak! sometimes when I buy a turkey breast when they're on sale, I do the whole process with the butter, wrap it really tight and put it in the freezer, when I want it, it just has to defrost and in the oven it goes! DH loves it! hope you give it a try!
