This is a recipe I found at Publix, but changed a little:
1 lb. boneless skinless chicken breast, cut into thick strips dried thyme, oregano salt, pepper 1 clove minced garlic (I have used garlic powder also) 1 can chicken broth 3/4 cup white wine juice of 1 lemon, or 2 tbsp. lemon juice cornstarch/cold water In a large skillet, heat a tbsp of oil. Season the chicken with the herbs, salt, pepper, and garlic. Add to the pan, turning and cooking until no longer pink. Add broth, white wine, and lemon juice, and simmer for 5-10 minutes, until the chicken is done. Remove chicken, reduce sauce for a few minutes. Add cold water and cornstarch to thicken. Serve with mashed potatoes, and sauce over top.
