The post about the black bean brownies inspired me to go dig up some other "point" friendly recipes I've run across over the years for those of you that are doing WW's and want a sweet treat for the holidays.
------------------------------------------------------ Snickers Pie 8 servings 3 points Ingredients: 12 ounces (1.5 cups) fat-free vanilla frozen-yogurt, slightly softened 1 small box sugar-free instant chocolate pudding mix 1/4 cup chunky peanut butter 1 cup Fat Free Cool Whip 3 ounces nugget cereal (Grape Nuts) Directions: Mix all ingredients together and pour into 8" dish and freeze. Yields 8 servings. Nutritional Info: (per serving) 131 calories, 4 g. fat, 1 g. fiber ------------------------------------------------------ Low Fat Truffles POINTSŪ value per serving | 1 Servings | 20 Desserts | Ingredients 1/3 cup semisweet chocolate candy 4 oz Fat-Free Cream Cheese 1/3 cup unsweetened cocoa 1 1/2 cup powdered sugar Instructions Melt chocolate chips in a microwavable glass bowl for 1 minute until just melted. Stir with a spatula until smooth. Using an electric mixer, beat cream cheese until smooth. Add melted chocolate and mix until smooth and creamy. Add cocoa powder and mix until blended. The mixture will be crumbly at first but will come together as a dough. Gradually add sugar and beat until the dough is soft and creamy. Roll dough into 1-inch balls (this is messy!). Dip and roll balls into shallow bowls of either sifted confectioner's sugar or sifted cocoa powder. Place truffles on a baking sheet lined with wax paper. Chill for at least an hour. Makes 20 truffles --------------------------- Pineapple Fluff 1 pkg Fat/sugar free Vanilla inst. pudding 20 oz. can crushed Pineapple in its own juice (drain a bit off) 16 oz. fat free sour cream 8 oz. fat free cool whip Mix pudding and pineapple then add sour cream. Fold in cool whip; chill. Serves 8 = 1 point. ------------------------------------------------ Pumpkin Delight 1 8 oz. tube of fat free Cool Whip 1 can Libby's 100% Pumpkin 1 pkg Fat free sugar free Vanilla pudding (do not make, just mix) 1 tsp. cinnamon Mix and store in refrigerator. 1 cup - 1 point -------------------------------------------------------- I have a word document with a bunch more that I've collected..both savory and sweet.....not all have the points value calculated though....if you would like a copy PM me your email and I would be happy to forward it to you.
