I was asked by Indianamom for a few recipes and I thought I would share them here too. Actually the first one is not a yeast bread recipe, but one of our favorite coffee cakes, the rest are ones that the dough can be made in the breadmaker.
Fruit Swirl Coffee Cake 1 1/2 cups sugar 1/2 cup butter or margarine 1/2 cup shortening 1 1/2 teaspoons baking powder 1 teaspoon vanilla 1 teaspoon almond extract 4 eggs 3 cups flour 1 can pie filling 1 cup powdered sugar 2 tablespoons milk Beat together sugar, butter, shortening, baking powder, extracts and eggs until well blended. Then beat on high speed for three minutes. Stir in flour. Spread 2/3 of the mixture in a greased jellyroll pan. Spread 1 can of pie filling over batter. Drop remaining batter over the filling in small clumps. Bake until light brown about 45 minutes in a 350 degree oven. Drizzle with a glaze made out of the powdered sugar and milk. This is my adapted Dinner Roll recipe that I altered and made my own: Kristine's Dinner Rolls 1 cup water 1/2 cup butter -- softened 1/4 cup sugar 1 1/2 teaspoons salt 1 egg 4 cups flour 2 1/4 teaspoons yeast Put ingredients into breadmaker in order listed. Use dough cycle. When done, shape into 16-18 rolls (I like to take a piece of dough and shape it with my hands and tuck the bottom underneath so it looks nice and smooth. Bake in a 350 degree oven about 20 minutes until the are gold brown, DO NOT OVERBAKE!!! Yield: "16 rolls" Cinnabon Copycat cinnamon rolls: Ingredients: ***DOUGH*** 1/4 cup warm water 1 cup milk -- room temperature 1 large egg -- beaten 1/4 cup butter -- softened 1 tablespoon sugar 1/2 teaspoon salt 4 cups all purpose white flour 1/2 package instant vanilla pudding mix 1 tablespoon bread machine yeast ***FILLING*** 1 cup brown sugar -- packed 1 tablespoon cinnamon 1/4 cup butter -- softened ***CREAM CHEESE CINNAMON FROSTING*** 4 ounces cream cheese -- softened 1/4 cup butter -- softened 1/2 teaspoon vanilla 1/2 tablespoon milk 1 1/2 cup powdered sugar 1/2 teaspoon cinnamon Directions: Dough Add the dough ingredients, in the order listed, to the bread machine and prepare using the dough setting. On a lightly floured surface, roll out to an 18" by 30" rectangle. The dough can also be handmade. If you use regular yeast, you may want to let the rolls proof for 15-30 minutes after assembly. Filling: In a small bowl, mix brown sugar and cinnamon. Spread the softened butter over the dough and evenly sprinkle on the sugar and cinnamon mixture. Starting at the long edge of the dough, roll up tightly. Mark the roll every 2 inches. With a thread cut the roll by placing the thread under the roll at your mark, crisscross over and pull to cut. Place rolls into greased 8" or 9" baking pans 2" apart. Cover and let rise in a warm, draft free place until almost double, approximately 1 hour. After rising, rolls should be touching each other and the sides of the pan. Bake at 350 degrees F. for 15 to 20 minutes, or until golden brown. Cream Cheese Cinnamon Frosting: In a small bowl, mix cream cheese, butter, vanilla and milk. Add powdered sugar and cinnamon and mix until smooth. Spread on warm rolls and serve immediately. This recipe has been adjusted so that the dough can be prepared in your bread machine. I also use the French Bread recipe that my breadmaker came with and I have a French Bread pan that makes great loaves. You can do a search for French Bread Pans if you do not know what I am talking about. I haven't really found a great pizza dough recipe, but I have used this one, if anyone has a pizza crust recipe that they would like to share, please do. Pizza Crust 3 ½ cups four 1 cup warm water 2 tablespoons yeast 2 tablespoons honey ¼ cup olive oil ½ teaspoon salt

I used to make those Cinnabon CopyKats. YUM YUM YUM. My bread machine always got a workout making pizza dough, bagels, sweet rolls, etc. Gluten Free now, so haven't used my machine in several years. Ahhhh <imagining the smell
> The Cinnabons would make a fabulous gift in a nice bakery box.... Allison |

Can you use Whole wheat flour for the pizza crust? ALso can you just mix if you don't have a bread maker?

Yes, you can just mix it if you don't have a breadmaker. Breadmakers are relatively inexpensive, I think the one I currently have my mom got at WM for less than $40.00, we'll worth the investment. I have not tried the Pizza crust with WW. I do grind my own wheat (my neighbor loaned me her grinder and her daughter is allergic to wheat, so I keep it here and have a bunch of wheat kernals) and have another bread recipe that I use for fresh ground wheat, if anyone wants that. I do do it by hand, it makes 4-5 loaves at a time.

I used to use white-wheat flour instead of ap flour with no problems. It is nutritionally better for you than white flour, but it bakes like white flour. Before that was available I used about 1/3 whole wheat and 2/3 ap flour.

Of course, the website is being upgraded at the moment but I can't directly link to it, but I found this recipe for pizza dough easy and tasty! At allrecipes.com search for Jay's Pizza Crust recipe, it's very good.

All these recipes sound so good. There is nothing like the smell of yeast dough in the house.....mmmmmmm..... It's like cookie dough for me - not sure if it's better baked or raw but I love it both ways!! Drives DH crazy when I eat any kind of raw dough, creeps him out. :-)
