I forgot about these pancakes, dh doesn't like them every week (we always do pancakes on Saturdays) but he was gone this morning, so I made them for the kids and I. I always double the recipe, except only use 1/3 cup brown sugar total and I added a little more milk to make the batter more manageable.
Great way to use up those cheap oats! Brown Sugar Oatmeal Pancakes Recipe Taste of Home cookbook. Ingredients * 1/2 cup plus 2 tablespoons quick-cooking oats * 1/2 cup whole wheat flour * 1/2 cup all-purpose flour * 1/2 teaspoon baking soda * 1/2 teaspoon salt * 1/3 cup packed brown sugar * 1 egg * 2 tablespoons vegetable oil * 1 cup buttermilk Directions * In a small bowl, combine the oats, flours, baking soda, salt and sugar. In another small bowl, beat the egg, oil and buttermilk. Stir into dry ingredients just until moistened. * Pour batter by 1/3 cupful onto a greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown. Yield: about 10 pancakes.

These look really good! (too bad I can't have to brown sugar!)
I bet that if you didn't have whole wheat flour you could process some oatmeal in a food processor until it was like flour and use that (I do this a lot, when I want to add whole grains, to things)
