This is quick and uses canned goods.
1 can of refried beans 1 can of red beans drained and rinsed. 1 or 2 cans of chicken broth (or beef if you prefer.) Mix refried and broth together in pot and until refried beans are incorporated well with the broth. (if too thick for your taste, add the second can of broth) Add rinsed red beans... heat until bubbly. "Dinner's Done!" Makes about 4 servings. Top with cheese and fresh onions. Serve with toast, tortillas, or crackers of choice. Options: You can start this dish by sauteing onion, peppers, and ham if you prefer. You can add left over taco meat for a more tex-mex version. note: I use Taco Bell refried beans.. they have more cumin/chill powder. If you want the ham use a more plain flavored can of refried beans such as Old El Paso, Rosarita, or the store brand. Also for a bigger recipe add a couple varieties of beans. I've mixed white, pintos, and reds for a more interesting texure and look.
