Default Dinner tonight is...Pepper Steak

I'm sure lots of you have a recipe for pepper steak. You can use frozen peppers you have on hand or fresh. I like to use one of each color, you can adapt to suit your taste. And you can use pretty much whatever thin beef you have on hand. Or regular steaks, cut into thin strips. Also the ginger is optional, I've made it w/o it when I did not have any, and it was still great.

Pepper Steak

1 lb. thin sliced beef, cut into strips
1 each red, green, and yellow bell pepper, cut into strips
2 stalks chopped celery
few stalks sliced green onions
1 clove minced garlic
1/3 cup soy sauce
1 tsp. paprika
1/4 tsp ground ginger
1 tbsp oil
cornstarch and cold water (to slightly thicken)

In a large bowl, combine soy sauce, garlic, paprika, and ginger (if you do not have ginger it is still good w/o it). Put the beef stips in the sauce, and toss to coat. Let it marinate while you prepare the vegetables. (you can of course marinate ahead of time for an hour or so, I just let it sit while I'm slicing the veggies). Add oil to hot frying pan and cook the meat and all sauce until the meat is browned. Remove the meat, add and cook the vegetables until crisp tender-not too long. Add the meat back and heat through. Add the cold water and cornstarch to the sauce, stir until slightly thickened. Serve over rice.

Yum! Your recipe is almost identical to mine, except I omit the paprika, and add 1/4 cup of beef stock. Bring to a quick boil after adding the cornstarch, and it will thicken well. My family LOVES this recipe. I use thin strips of London Broil when it is on sale.

We LOVE this. There were no leftovers. This is one my mom made when I was a kid, from a recipe club called 'Great American Recipes'. You would get packs of recipe cards in the mail every so often kind of like those CD mail order clubs.
