Default Stuffed Bell Pepper Soup.

It's quick... and it's good if you like stuffed bell peppers that is.

I started making this soup when I wanted to use up some left over stuffed bell peppers. DH like it so much he asked me to make it again... only this time.. fresh ingredients.

1 bell pepper (diced)
1/2 onion (diced)
1lb hamburger
1/3 cup cooking rice (don't use instant or minute rice.)
1 can diced tomatoes
2 cans chicken broth
garlic powder
salt
pepper

Season HB with garlic, salt, pepper and brown with the onions and bell peppers. When HB is brown, add rice and stir... then add chicken broth and tomatoes. Bring to boil and cook about 10 mins... then reduce heat and let simmer until veggies and rice are cooked through. (whole time is about 45 minutes if you are quick in the Kitchen) Taste and adjust seasoning if you wish.

Serve with Cornbread or crackers. Shave some nice cheese on the top if you like it that way.

hmm all ingredients we can have.....dd can pull out the tomatoes

thanks! I'll have to give this a try when the temp drops at least 40 degrees!

It's a whopping 49* outside right now. lol I start making soup as soon as I need to turn on the heater at night. I make all kinds all winter though this year I'll have to revamp some of my favorites because of the diabetes.
