Santa Fe Chicken casserole
Used a base recipe I found on taste of home, but changed it up. This is in the oven now, we'll see how it turns out.
2-3 cups shredded leftover roast chicken
1 can cream of chicken soup, undiluted
1 scant cup sour cream
1/2 cup salsa
(some chicken broth as it was a little thick)
frozen corn about half a cup
1 can black beans, rinsed
shredded mexican cheese, a large handful
crushed tortilla chips and more cheese for topping
Mix the soup, sour cream, and a little broth in a large bowl. Add the salsa, then all the other ingredients. Bake at 375 about 45 minutes until bubbly and heated through. Add chips and more cheese for topping during the last 15 minutes or so.
Would have to say, looks kind of weird but tasted great! DH is very picky, and even he was skeptical but liked it. You could spice it up further by adding hot sauce or a can of green chilies to it.
