Default Shepherd's Pie using on hand ingredients

I made this using several coupon items I had in my pantry, you may have all these items already on hand too. You could also use steam n mash potatoes or jarred gravy (there was a good deal on these at Publix recently).

1 lb. ground beef
pepper, garlic powder to season the meat (add other spices depending on your preference)
1 packet Lipton onion soup mix
carton beef broth (I used about 2/3 of the carton, depends on how much gravy you want)
Mixed frozen veggies ( I used froz. corn, froz peas, froz. green beans, and fresh carrots I sliced and precooked in the microwave)
cornstarch/beef broth (I used broth instead of water)
mashed potatoes

Cook ground beef, season with pepper/garlic powder (the broth and soup mix adds plenty of salt). Add the onion soup packet, then broth, enough broth to cover meat and more depending on how much gravy you like. Simmer for a few minutes, then thicken as desired with cornstarch/cold broth or water. Add frozen vegetables. Pour into casserole dish (9x9 will do fine). Top with mashed potatoes and dot top with butter if you like. Bake at 350 for 20-30 minutes until heated through. Enjoy with grands biscuits or homemade biscuits.

Its actually one of the first cool days today and I was thinking why didn't I make a stew or something. That shephards pie sounds good. Have you ever made it and froze it. Its just me (not something DD would eat) and I'm thinking maybe to make a batch in smaller casserole dishes that way its out of the freezer and in the oven for me.

I used to make a shepherd's pie using chicken and a white sauce. YUM! I will have to dust off that recipe.

I have also made Shepards Pie using a can of Tomatoe Soup (no water added)

Layer: Browned ground beef with onions.
Tomato soup
Green Beans
Mashed Potatoes
Shredded Cheddar Cheese.

No I have never frozen this. I assume it would turn out great though. This was actually the first time I made this.
