Default Loaded Baked Potato Soup

This is one of my favorite soups. I found the recipe in Simple and Delicious a while back and tweaked it for my liking. Anyway, here it is...

2 1/2# Baked Potato's, cubed and peeled if you like (we like the skins)
6 tbsp butter
5 tbsp flour
1 1/2 tsp salt
1 tsp dill
4 cloves garlic - minced
1/4 tsp pepper
6 C. milk
8 oz. sour cream
1/4 C. thinly sliced green onion
1 # bacon, cooked and crumbled
1 C. Cheddar Cheese - shredded
chives to taste


In a large pot, melt butter, then add flour and whisk until smooth. Add salt, dill, garlic, and pepper (you might like more pepper, DH doesn't like much). Cook for about 2 minutes whisking the whole time. Gradually add milk, bring to a boil, cook and stir until thickened, about 3-5 minutes after a boil. Remove from heat, whisk in sour cream. Add potato and green onion. Garnish with bacon and cheese.

I always have my potato's baked the night before, my green onions sliced, and bacon cooked way a head of assembling the soup so this takes me about 20 minutes to put together... Since my potato's are cold, I do put it back on the heat after I add the potato and green onion.

Add in's: broccoli, ham, I always add some of the bacon to the soup... basically anything your family likes on a baked potato can go into the soup to make it your own...

mhmm....with the cold weather right around the corner...this sounds sooooo good.

I just might have to whip up a batch this weekend. The only thing I don't have in the house right now is the potatos!

sounds like something my hubby would like........next time you make a pot just drop some over for him at the hotel dd and I can't do the dairy...but it does sound perfect for cooler weather....

CMU would you please send the cooler weather down here....even 10 degrees cooler from 89 to 79 would be perfect!!

I have an almost exact same recipe from a victorian tea room cookbook I have and we love it!! Plus, you found yours from Simple and Delicious (taste of home) my favorite website for recipes! I usually just microwave the potatoes instead of baking them, but someday I will do it the real way.

Nope! I'm keeping the cooler weather all for myself LOL!

I can't handle heat and humidity...well...mostly I can't handle humidity and I don't like cold and snow.....fall and spring are my favorite times of year.

It's currently 52 degrees out right now and overcast in West Michigan...perfect temperature for me....now if I could just make it so it doesn't go below 40 until spring I will be happy.

yea I don't like heat and humidity either...thus the search for a new home...

my friend is headed over to Ludington....to go shopping in Pentwater with her sisters....hope the weather's sunny then...

Not today, but tomorrow and Thursday it's supposed to be and then rain again Friday and Saturday.

I have a sister that lives in Pentwater, my mom was from Pentwater....I was actually born and raised in Rothbury so I am extremely familiar with Ludington, Hart, New Era, Pentwater, Montague, Whitehall etc, etc.
