Default Recipes that I want to try soon....

These are a few recipes that I'm going to try soon:
Taco Bake
Taste of Home

Ingredients:
1 pound ground beef
1 small onion, chopped
3/4 cup water
1 package (1-1/4 ounces) taco seasoning
1 can (15 ounces) tomato sauce
1 package (8 ounce) shell macaroni, cooked and drained
1 can (4 ounces) chopped green chilies
2 cups (8 ounces) shredded cheddar cheese, divided

Directions:
In a skillet, brown ground beef and onion over medium heat; drain. Add the water, taco seasoning and tomato sauce; mix. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in macaroni, chilies and 1-1/2 cups of cheese. Pour into a greased 1-1/2-qt. baking dish. Sprinkle with the remaining cheese. Bake at 350° for 30 minutes or until heated through. Yield: 6 servings.


Fiesta Tamale Pie
Healthy Crockery Cookery by Mable Hoffman
3/4 cup cornmeal
1 cup beef broth
1 lb. raw hamburger
1 tsp. chili powder
1/2 tsp. cumin
14-16 oz. jar thick and chunky salsa
16 oz. whole-kernel corn, drained
1/4 cup sliced ripe olives
2 oz. reduced fat cheddar cheese, shredded (1/2 cup)
In a large bowl, mix cornmeal and broth; let stand 5 minutes. Stir in beef, chili powder, cumin, salsa, corn and olives. Pour into a 3 1/2 quart slow cooker. Cover and cook on low 5 to 7 hours or until set. Sprinkle cheese over top; cover and cook another 5 minutes or until cheese melts.


Quesadillas de Camarones (Shrimp Quesadillas)
Flour tortillas
8-12 Large raw shrimp, peeled and deveined
8 ounces Mexican red sauce
1 large onion
1 red bell pepper
1 green bell pepper
2 cups cheese, grated (Monterey Jack is best)
2 tablespoons olive oil
Salt to taste
Pour red sauce over shrimp. Set aside.
Chop vegetables into large pieces. Heat skillet over high heat and add olive oil. Cook vegetables over high heat until they start to get brown/black. Remove from skillet and set aside.
Return skillet to high heat, then dump in the shrimp with the sauce. Cook, stirring only occasionally, until shrimp is opaque. Add in a little water if the sauce gets dry. Remove from skillet and chop into bite-size pieces.
In a separate skillet, heat butter. Place a tortilla in the skillet, then layer on ingredients: cheese, vegetables, and shrimp. Top with a little more cheese and a second tortilla. Cook on both sides, adding butter before flipping to the other side so the tortilla isn’t overly dry.
Remove from skillet and slice into wedges. Serve with rice, beans, salsa, sour cream, guacamole—whatever you’d like!

Don't forget to add crushed tortilla chips to the top of your taco bake!! It makes it so much better. I also tried a 'moist chocolate cake' recipe from Taste of Home, for DHs birthday today. It was SO good and moist too.

kristine these all sound really good. I love to cook, especially trying new things. have you made any of them yet since posting? please let us know

I've made the shrimp and we all thought it was really good. I have not had time to make the other two! Anyone else make them?

The Quesadillas de Camarones (Shrimp Quesadillas) recipe...did you get that from Pioneer Woman? I made those a few weeks ago and we loved them! SOOO tasty! (I used the El Pato tomato sauce like she suggested and it is very spicy and good) I have made so many of her recipes over the years and we've loved every one of them more than the last.
