Dinner tonite was Taco Bake

This was delicious topped w/ crushed tortilla chips along with the cheese. I also added a can of sliced black olives to the meat mixture. Garnish w/ your favorite taco toppings: tomatoes, lettuce, sour cream, avocado, green onion, etc. ENJOY!

Ingredients:
1 pound ground beef
1 small onion, chopped
3/4 cup water
1 package (1-1/4 ounces) taco seasoning
1 can (15 ounces) tomato sauce
1 package (8 ounce) shell macaroni, cooked and drained
1 can (4 ounces) chopped green chilies
2 cups (8 ounces) shredded cheddar cheese, divided

Directions:
In a skillet, brown ground beef and onion over medium heat; drain. Add the water, taco seasoning and tomato sauce; mix. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in macaroni, chilies and 1-1/2 cups of cheese. Pour into a greased 1-1/2-qt. baking dish. Sprinkle with the remaining cheese. Bake at 350° for 30 minutes or until heated through. Yield: 6 servings.

I love Taste of Home and have been a subscriber for many many years. I also love making "mexican" type casseroles. One of the best recipes I ever made was called "Enchilada Stack" and it came from Taste of Home. I need to make that one again. It is absolutely mouth-watering!

Southern Cross, I will search for that one on their website! We love enchiladas. I have a recipe for an enchilada casserole that you basically layer the ingredients like lasagna, Dh doesn't care for it (its the same ingredients as regular enchiladas!). Sauce, tortillas, sauteed onion and zuccini (instead of olives) chicken cheese, repeat. I found a mexican style casserole recently called chicken n chips. Chicken soup/sour cream, chicken, chilies, cheese, crushed chips on top. I may add corn and black beans.
