Default Funnel Cakes

This is a family recipe given to me from friends.

FUNNEL CAKE

3 LARGE EGGS
2 CUPS MILK
1/4 CUP SUGAR
3 CUPS FLOUR (original recipe calls for 3-4 cups flour)
1/2 TSP SALT (i don't use this much)
2 TSP BAKING POWDER

Using electric mixer, beat eggs and add sugar and milk. Mix well. Add salt, baking powder and half of the flour. Beat until smooth. Add only as much more flour that is needed. (I find 3 cups is perfect) Batter should be thin enough to run through a funnel. Drop from funnel into hot fat, (375 degrees), making intricate shapes by swirling and criss-crossing while controlling the funnel spout with your finger. Cook until brown each side, (about 1 min per side.) Set on paper towels on paper plates to drain. Serve hot with powdered sugar sprinkled over cakes. Makes about 10 cakes about 10" in diameter.


I fry mine on the stove in a large flat-bottomed pan with about 3/4 inch of oil in it. I don't use a thermometer, just set my electric stove to about 3.5 (out of 9 settings) and test it with a tiny drop of water. If it bubbles up, it's hot enough to start. Don't want it too hot or you'll be getting burned by the oil spattering all over. Made these for a family gathering, and they were soooo good. So easy to make, too.

thanks for the recipe. i'll def be trying these. don't know if it would be much help since they would be smaller around, but i remember seeing on sandra lee's show that she cleaned out a ketchup bottle and used it to funnel the mix into the oil.

this brings back memories....when I was growing up my dad use to have a trailer that traveled around selling funnel cakes at different fairs...I remember standing on a crate at the window taking orders for them, they always went faster than he could make them. He would expirement with different flavors too....I never to this day could eat them again after selling them all day.

I absolutely love funnel cakes, elephant ears, fried dough period.

Hey I like that idea! great for storing it too...this makes more than enough for one family. I made it right before the party and it held together well. If it sits for longer than a day or two it starts to separate and needs to be mixed again.
