MMMM lemon sounds so good. I love jello cakes. For me When I want to do 2 flavors I just make a 2 layer round cake, do each pan a different flavor, stack and frost. Just because I don't like to wait. I love different colors. I love doing lime and cherry at Christmas.

My mom has done this for years, more often than not with lemon. she would take a cake mold (so it was kinda like a mountain of a cake) and bake the cake in that, then poke the holes in it and pour in the jello, then she would do something with the icing, not sure what but it was a little runnier and she kinda drizzled it over the cake and sprinkled it with sugar crystals. it was so yummy but I think the pudding/cool whip would be a great summery dessert.

I want to make this in a 9x13 pan. How many small boxes of jell-o shld I use?

One small box will be enough.

I have found that a chopstick or the end of a wooden spoon works best for poking holes.

While cool whip works good in a pinch... if you want "to die for" whipped frosting use one packet of dream whip with one package lemon pudding and 1 1/2 cups of milk - beat until fluffy.

I've also done lemon cake with raspberry jello and lemon frosting. Yummy!

...we need to quit talking about jello cake, making me hungry.

I made a strawberry poke cake once and it was delish! It had the cool whip frosting with strawberries on top. Ok, that does it...I have to make another one.

O.K. mine is in the fridge. I'm trying the lemon cake w/lime jello and lemon pudding/cool whip frosting. Will serve tomorrow at the family cookout!

See I knew we'd have an expert out there....I used a toothpick to make holes and 2 boxes of jello...I think 2 was too much for a 9X13 pan. My holes were too close together. I did not get pretty lines. BUT, IT SURE WAS TASTY NEVERTHELESS! So, even if you mess up your poke cake, you can still eat it....

this is a dry mix kinda like pudding, but you add milk and vanilla to it to make fresh whipped cream. You can find it in a box around the pudding mixes or jello cheesecake mixes. Hope it helps. 264_4300025908.JPG
