Default cool dinner ideas when its too hot outside

I'm hoping you'll post some ideas I can use. Tonight we are having cold tunafish on buns and some cold canteloup. So what are your favorites when it's so hot your stove laughs at you?

A BIG chef salad with lots of veggies and ham and turkey and lots of dressing!!!! good luck you can also do baked potatoes in the microwave and it dosen't heat up the whole kitchen

I would have to say a big salad, or chicken salad sandwiches, or regular old ham and cheese sandwich.

Recently we have been enjoying salads with precooked pasta and grilled chicken strips. Husband does mass grilling on the weekends so that we have plenty grilled chicken on hand durring the week for meals like this.

We had shrimp cocktail, big garden salads, and a nice fruit salad this week. Ice cream for dessert too of course.

on hot days I make DH grill so it doesn't heat up the house and I don't have to do the work!

Big Salads ducky, and make 'em healthy.

Grill some chicken (Keep some grilled like falcons) grill some veggies in a grill basket or on skewers (I hate skewers, easier in a basket) Slice chicken thin and put over veggies and drizzle with a light balsamic dressing. Kinda like a grilled salad.

Nothing wrong with sandwiches and fruit. And I'm always happy with an apple and a little peanut butter.

You can sear on top of the stove without heating your oven. Fish is good and light.

Tonight we're having salads and I am heating the oven to roast some diced taters. Then I'll mix some bacon bits in lowfat sour cream for a dip. Sometimes I mix a little cheese in this but we'll have cheese on the salads. Or DH will. I like cheese but not so much on a salad.

I think this is a good, summer supper thread. Maybe LITSA can do us a summer supper sticky? What ya'll think?

I like chicken salad sandwiches, chilled watermelon and iced sweet tea, but I still cook a pot of gumbo mid July when it's steaming out side, LOL. Guess I'm a little immune to the heat considering where I live.
