Default Chicken Leg Quarters

With a tight budget and chicken leg quarters on sale for .29 a lb, I couldn't resist buying 20 lbs for under $6. Other than bbqing the, every recipe I've tried has resulted in some greasy, disgusting dish. I'm open to removing the skin and cooking in a sauce in the crocpot, or separating the leg & thigh and attempting to debone the thigh. Please help me come up with a dish(es) that will put this bargain protien to good use. Thanks!

take the skin off and season the chicken well and place in pan with about a 1/2 cup of broth or salty water and place in oven covered with aluminim foil and bake for 50 min at 350 good stuff!!!! you can make chicken catcatoie, garlic chicken with italian dressing marinade theres all kinds of stuff to make with the thighs just do take off the skin

Default Nuke it!

We also LOVE to BBQ, but on nights when time is tight, we nuke it! I personally do not crock pot chicken well, but you can have dinner ready in under 30 minutes cooking 3 lbs of meat alone!

Put your meat in a nukable dish and simply season it how you want it, I like to cook with the "top" down so the juices run through it (season the backs), half way thru being cooked, flip them and season the top cooking til done.
Throw bisquits in the oven and begin nuking veggies, letting the chicken settle, by the time the bisquits are done, veggies should be done, then serve!

We do this with a pretty large variety of seasonings because chicken is SO inexpensive and we tend to eat alot of it.

You can also nuke the chicken with your favorite BBQ sauces, or try marinades to---we LOVE the teriaki (? spelling ?) chicken. You can also do rubs in the microwave to.

Place sliced sweet onions on bottom of a casserole dish. Season chicken thighs with chicken rub, place them on top of onion slices. Pour Italian dressing all over, but not too much - just enough to coat chicken pieces. Bake in 375 degree oven for 30 minutes, turn pieces over and bake another 30 minutes. Enjoy!

I know one thing I do is put the chicken in a stock pot and boil it til it all comes off the bone. I strain it take the bones out of course and the chicken I would make into casseroles or stir fry's pot pies chicken salad..I also put terriyki sauce on the chicken too.

We LOVE chicken legs and I would die for 29¢/lb!! I buy 20 pounds anytime I can get them for 49¢ or less.
I take them home and put them in big roasting pans with any flavored liquid--bbq sauce, soy and garlic, spaghetti sauce, italian salad dressing, teriaki sauce, balsamic vinegar and EVOO, oyster sauce and soy---any flavor
I cover them with tin foil and bake slowly at 250 degrees for 2 hours. When I take the pans out, I pour off all the fat and let the legs cool. I put them in foodsaver bags for quick snacks. (usually without skin) My husband loves to be able to request a chicken leg any time for a snack or a meal. I put 2 to 4 in a bag--marked with flavor and date.
Most of the time, the legs are used whole but some times I make croquettes, chicken salad, chicken and noodles, any casserole. They run out faster than I can find the sales!

Maybe you should buy 40lbs next time. lol

I used to be a "strict" breast and white meat person.... but I think that's changing. I'm really liking the chicken legs. Well marinated with Louisiana Supreme Chicken Wing Sauce... found at the $1 store... then baked or put on the grill in pan until done... holy smokes. that is some good stuff.

crock pot chicken covered in salsa for a few hours. when you are ready to eat, toast a tortilla and add Monterrey jack or cheddar jack cheese and slap on the tortilla and it makes great easy quesedillas!

Default What NOT to do with your chicken leg quarters!

so much for dinner! (disaster pics)

Makes me giggle just thinking about this again. I did perfect grilling them now- I shut off the middle burner and keep them on the top rack and slow cook them about 45 minutes. They are juicy with nice crispy skin that way. I guess I learned the hard way!

Default Chicken tacos

I usually use chicken breasts but I have been using whatever is cheaper now a days.

I like to put the chicken in a crockpot and add the taco seasoning mix with a little water and then just let it cook in the crockpot, I find that the longer it cooks the easier it will fall of the bones, I would take the skin off, then when it's done you can make chicken tacos or burritos or even nachos, sometimes I even put it on rolls for a sandwich type of thing.
