I like to make Wing Dings with chicken legs. Normally this is for chicken wings, but the legs are ever so much more satisfying to eat.
Wing Dings: Marinade: 2 15 oz bottles soy sauce 1 cup water 1 cup brown sugar 1 Tbls ground ginger 3-5 green onions finely sliced In a sauce pan bring soy sauce, water, brown sugar and ginger to a boil. Once sugar is dissolved, shut off and set aside to cool. In a 9x13 baking dish arrange chicken pieces side by side (you can pack them in rather tight). Once sauce has cooled add in onions and pour over chicken. Cover with foil and put in refrigerator for 12-48 hours, turning over 1/2 way through. When ready to bake, drain off marinade and place covered pan in oven, bake for 30 minutes at 350 F, then remove foil turn chicken over and bake an additional 20-30 min uncovered. You can also skip the oven and throw these puppies on the grill for about 10 minutes. My kids LOVE them. The de-boned leftovers are great for an oriental style chicken salad.
