my grandma leaves for Wisconsin on vacation Saturday, my mom is stuck feeding the hired farm hands for a week anywhere from 5-7 guys, so I'm supposed to send her ideas. She wants them simple and maybe even something different. They are beef farmers, so beef isn't a problem. She does keep other things stocked to though and will go to the grocery store I'm pretty sure.
I have to send her ideas and recipes. Thanks, Kristine Some ideas so far, spaghetti, a Mexicali bake that I do, posted below. Mexicali Chicken 2 boneless chicken breasts 1/4 cup olive oil 1 can stewed tomatoes or salsa 1 can chili beans 6 oz. frozen corn 2 cups chicken stock 1 1/2 cups rice shredded cheddar cheese Cook chicken in olive oil and cut it up or shred. Preheat oven to 375 degrees. Pour rice and stock into a baking dish. Place chicken on top, add everything else except for cheese. Cover and bake 30 minutes or until rice is tender (depending upon the kind of rice, it may take longer) Remove foil, add cheese and let it melt. Serve.

Chicken Pot Pie - this can feed 5-7 people, depending on how big their appetite is
1.5 pounds chicken breasts 1 8oz bag of frozen peas and carrots 2 potatoes, chopped 1 onion, chopped 2 boxes biscuit mix (I use Jiffy, you just need enough to cover the top) couple of tablespoons of flour salt and pepper to taste Boil the chicken until done, reserving the broth. Take out the chicken, and while it's cooling, saute the onion and potato (in another pan of course) in oil approx. 5 minutes. Add a couple of tablespoons of flour (you want to use about the same amount as the oil in the pan. 2tbsp oil = 2tbsp flour). Stir the flour for about 30 seconds, just to cook the flour. Add the chicken broth a few ladles at a time, stirring after each addition, until it's the consistancy you like (I personally like mine kind of thick. You can always add more.). Add salt, pepper, and italian seasoning (optional) to taste. Simmer for about 10 minutes (you can shred the chicken while you wait). Add the frozen veggies and shredded chicken. Transfer mixture to a 13x9 casserole dish. Mix up the biscuit dough (I like to use any leftover broth instead of water just for extra flavor) and spread the dough over the chicken mixture. It's easier to spread if you keep your hands wet. Bake at 375 until the biscuits are done. Tasty goodness! I might have made it sound harder than it really is lol

or any crowd pleaser. if you aren't carb conscious serve with garlic bread...OMG I am totally craving carbs now!!

Jambalaya:
Chopped ham Sliced Smoked sausage (I buy the eckrich or similar that come 2 in a vacuum sealed pouch near the meat/packaged deli meat in the store.) Chopped Chicken breast, I usually start with raw boneless skinless...but you can use leftover chicken pulled apart, too) Diced Bell pepper (I do like to use the variety together green, red, and yellow or orange for this dish) (You can also add zucchini, okra, etc.) Diced onion Pressed Garlic Chicken broth Tomato sauce Stewed Tomatoes (definitely at least one can) Rice Hot sauce Drizzle a little oil (olive, canola, vegetable) in a big stockpot/stewpot. Add the chopped chicken and cook until no longer pink. Add the chopped ham and sausage. Season with seasoned salt, pepper and crushed red pepper flakes. If you like spicy, you can add some of the hot sauce now...otherwise add it later. (I find the meat will retain some heat...) Add the chopped veggies and garlic (If you don't have onion and garlic be sure to use onion/garlic powder--heck half the time I still use these even with the veggies.) Add the rest. (I like tomato sauce a lot, so I use quite a bit of that in mine.) --also, make sure you use 2 C liquid for every C of rice--that is very important. Bring to a boil. Stir well. Then cover and reduce heat to low. Cook about 20-30 minutes. (leave the lid on so the rice can cook! Don't peek more than once!) (in a really big pot, the bottom rice might burn...happens, just don't scrape the bottom.) |
