Default Pasta salad

I make a good pasta salad thats very easy.

Elbow macaroni
mayo
mustard
diced ham
diced or shredded cheese
onions chopped
pickles, sweet or dill
salt
pepper

I have a few summer salads that I make. Typically I used a Zesty Italian dressing, but sometimes I like to mix them up a bit and try a specialtiy vinigrette.

Pasta Salad

Tri-color rotini - 1 box
Yellow,green, red peppers - half of each
Sliced fresh mushrooms -1 8 oz pack
Celery - 2 stalks
Onion - 1/2 red or sweet whatever you have on hand.
Radishes - 3-4 large ones diced up.
Grape Tomatoes - 1 pint halved.
1 bottle FF Zesty Italian.


Spinach Strawberry Onion Salad

1 package of washed spinach
1 pound of strawberries - hulled and sliced.
1/2 of a red onion thinly sliced...has to be a red onion...
1 bottle FF Zesty Italian.

Toss all together last minute so the spinach doesn't get soggy.

Mayo Free Potato Salad

1-2 lbs of red skin potatoes - washed but not peeled.
1-2 lbs of smoked sausage - depending on how meaty you want it.
1-2 tablespoons of Italian herb seasoning - the kind that has oregano in it.
1 green pepper thinly sliced into strips.
1 bottle FF Zesty Italian.

Cut up sausage into thin slices. Boil potatoes...in the last few minutes of boiling time on the potatoes, throw in the sausage. Drain potatos and sausage and toss in the green peppers. Pour the whole bottle of italian dressing in and toss together. Can be served at room temperature or cold. This is one of those dishes that gets better the longer it sets.

I make the same basic "pasta, fat-free Italian dressing, veggies and cheese" recipe, but I add 1 T dried Italian seasoning and 2-3 T parmesan cheese, and everyone thinks I make the dressing homemade too! <wink>

We use:

Tri-color Rotini
Cucumber
Black and green olives
Broccoli
Cauliflower
Bell Pepper
Grape Tomatoes
Italian dressing
Topped with Pamesean Cheese

Yummy!!!!

Just made some! I take a box of rotini, and add pepperoni, blanched broccoli pieces (to bring out the color), sliced grape tomatoes, chunks of cheddar cheese, any color pepper. Add as much as you want to your salad. Then I mix with 8 oz zesty italian dressing and sprinkle supreme salad seasoning across the top and stir. Refrigerate until ready to serve. MMMM.
