Default How do I make Sausage?

I have a ton (okay only about 20-30 lbs) of ground pork. i am trying to find a seasoning to make it into sausage. (for like eggs & saug, etc.) any ideas would be appreciated. Thanks!!

Sausage is..

Black Pepper,
Salt
Sage

optional Red Pepper.


Try a small amount first. Say half pound

measure the seasonings... and write them down... start light...
mix small amounts... cook a small portion taste. what does it need?


My father made sausage... but he only used his sense of smell. He never wrote anything down. I just remember the ingredients... and he made like 50lbs of the stuff at a time.

I'm sorry...I just had to post. I read the title and was thinking, umm you just put in a pan and fry it up. It's not that hard. Kind of like hamburger!

Default Sausage recipe

Here's my recipe:
We use ground turkey, but the original recipe was for pork.

1 to 2 lb. ground meat (depending on how strong you like it)
2 Tbsp honey or brown sugar
3 tsp. salt
1 Tbsp. ground sage
2 tsp. savory
1 tsp. black pepper
1/4 tsp. red pepper
1/2 tsp. nutmeg

Good stuff!

When we make sausage we use the Morton Sausage and Meat Loaf Seasoning Mix. I buy mine at a feed store that is the only place in my small town I can find it. But we like it and when we want to make hot sausage we just add some Cayenne Pepper to the mix as well. We used this on our last batch of sausage and it worked really well. The taste was great

This sounds like a great recipe (I like my sausage a little sweet). I currently have about 30 lbs of ground pork in the freezer from a whole pig we bought. I haven't come up with a recipe for good sausage yet.

Well, try it with a pound or two and see what you think!
I found the recipe in a magazine, possibly Country Woman(?).
It was called Tall Pines Farm Sausage.

Dont worry I wont mix it all into sausage. My family would miss all the creative recipes I have made for meatballs.
