$2.24 Feeds four! We usually have some left over for DH to take for lunch, too..

Mix & bake the cornbread in the bottom of the till cooked, but not golden.. Pour tamales (take the peel off), then the chili, and smooth. Sprinkle over the cheese and put back in the oven till warm. Sometimes I “hide whatever veggies I have on hand in it (cut up pretty small) and serve it with a nice salad..

You know, I never had a casserole in my life until my sister came home from college with her recipe for tuna casserole. I was so impressed! Actually, I still kind of like it.

One dinner I make is porkchops covered in Raspberry vingarette dressing and noodles or what ever you want with it and veggies.

I do a lot of crockpot cooking and love making caseroles. Make chicken alfreado lasgana. cooking is my favorite. I am forever coming up with some kind of concoction..

One night was a roast with mixed veggies and a little of this and a little of that for the sauce..hubby loved.

when I make my chicken pot pie it is usually with bisquick. for me I dont care for the jiffy with it. But that is me. I'm sitting here trying to think of something for dinner.lol


Oh another one is scramble hamburg with potatoes with onions and peppers when I have them on hand.

and Scramble hamburg and rice with gravy we call it blah on a shingle.. wont say the first word of it lol..

I got this one from my BIL about 20 yrs. ago-I think they called it Taco Bake.
The variations are endless, and all inexpensive.
1 lb. ground beef(or turkey)
1 can tomato paste
chopped onion
1 can drained corn(or frozen)
chili powder(or you can use taco seasoning)
cilantro
1 can diced tomato(or one fresh tomato)
1 box Jiffy(or any) corn bread mix
shredded cheddar

Cook hamburger and onion til done-drain
mix in paste,tomatoes,corn and spices-put in casserole dish
top with cornbread mix
bake at 350 til bread is done(20-30 min)
sprinkle cheese on top and bake til cheese is melted

Serve with a salad and tortilla chips-can top with black olives,sour cream,whatever
Could also add in beans(kidney or black works well) or salsa, green peppers, mix in some cheese so its really cheesy...you get the idea
Make sure to test the flavor before you bake it to make sure it is spicy enough and not bland
This feeds a family of 5-two teenage boys! Usually have plenty leftover

buy spaghettios take an onion and green pepper add a pound of cooked hamburger let it simmer and it is delicious and inexpensive


kids love it

also beanies and weannies pork and beans cut up the hot dogs add onion doctor it up with some bbque sauce and you have an instant hit

also buy a chicken whole that goes a long way, save the bones and make chicken soup with raman noodles, celery carrots very inexpenise several meals

another favorite is pea soup from the ham hock after you eat you ham

LOL too funny..I dont recall many going bad but I am sure I had a couple. I just go to the cupboard and go from there like tonights dinner. Put what I was having in Just chatting Java hut. Homemade soups in the winter are the best way to go. I make lots of beef stews as well. Make homemade baked beans which I just started making a few months ago..The only one that eats them is the hubby. Me and my dd cant stand them YUCK..

I also like the spagetti o's that floridafinn mentioned.

Oh man Kim... one time I had the NOT so billiant idea to put baby oysters and black beans together in a soup. Most disgusting tasting gunk I had ever made... except maybe the cinnamon chili incident. Anyway the black bean/oysters went straight to the chickens... who went crazy for it... I guess they were happy to have a hot meal in the -15* weather we were having.
