I thought I had the title. I burned my ex out on casseroles. He refuses to let his wife make a casserole now, just meat and potatoes. Hate to see their grocery bill.

^^ I make that... my recipe's name is Rice-A-Garbage It came from a family friend. I'll use whatever veggie I have on hand, but usually a mixed veggie. Spruce it up with a flavored tomato soup.

Love the name.

Default Alfredo suggestion

One of my husband's favorite dinners is alfredo. So, I'm always on the lookout for alfredo recipes. Since couponing, I picked up the Macaroni Grill boxed alfredo dinner mix. OMG!!!!! It is soooooooooooooo good!!! I have to make 2 boxes for our family of 4. I think it costs about $3.50 a box without a coupon. I usually add chicken or shrimp. Try it!! A $1 coupon just came out this past Sunday.

yesterday we had tacos with ingredients purchased on sale, of course including a $1.50 Publix cpn off of salad/lettuce....LOL as I write this I realize I forgot the tomato for my dh but he never said a word

Anyways, when I opened the refrig I noticed some leftover rice from a couple of nights ago. So I heated up some olive oil and 1 tb of butter then chopped up a small onion and cooked it up along with some chopped garlic....threw in a little cilantro I had in the refrig....then the rice......stir this up and finally tossed in some of the salsa...... I called it Spanish Rice: my DH and daughter's BF thought it was the best...LOL whatever

You know I always hate to disagree with you lucy, but... My brother is married to a skinny woman who doesn't cook, so when we all showed up at their house for a family gathering she called her mother and asked her to bring some food over. No lie, her mom showed up with 6 different casseroles (all made with at least 2 cans of cream of something soup). I jokingly said to her "What are you? Methodist?". She didn't get the joke and said very seriously "No I'm Presbyterian". I didn't mean to offend but the Methodists in my neck of the woods have a potluck every Wednesday night which is referred to locally as "Kingdom Casserole". I think my little brother's MIL could show even those ladies a thing or two.

I had to swear in my wedding vows to never serve casserole more than 2 nights a week and limit crockpot use to once a week or less. I didn't actually say those exact words, but the DH swears it was included as part of "cherish", which I did say.

We love tamale pie!! It is not the healthiest (OK the worst!) meal but it is super cheap and so warm, gooey, and oh so comforting~ takes me back to my childhood!
99c- I can of Hot Tamales (has any one every seen Qs for these?)
50c- (with Q) Can of chili
50c- Jiffy Cornbread mix or for about 25c you can make your own~ egg, cornmeal and a little water.
25c- Shredded Cheese!!!!!
$2.24 Feeds four! We usually have some left over for DH to take for lunch, too..

Mix & bake the cornbread in the bottom of the till cooked, but not golden.. Pour tamales (take the peel off), then the chili, and smooth. Sprinkle over the cheese and put back in the oven till warm. Sometimes I “hide whatever veggies I have on hand in it (cut up pretty small) and serve it with a nice salad..

That's just too funny my DH says there are parts of the "contract" that are just too small for me to read.

Man I got the heebie jeebies just reading about all that casserole.

I am still considering what is any casseroles I want to make. I have not one since I was a child. I just felt like my mom could and did make anything into a casserole version. Yuk!
