We freeze them here too! So much cheaper (and healthier) making homemade waffles/pancakes and freezing them.

Me too! I flash freeze pancakes, waffles and muffins and then store them in the freezer in big ziploc bags. That way we can just pull out what we want and they don't stick together. DH & DD's get a good breakfast that's yummier, healthier and cheaper than store bought!

I don't know what a flash freeze is, but I'm pretty sure I don't have one. Can I just put homemade muffins in the regular freezer? I was wondering about this because I make them every Sunday for my hubby to bring to work for breakfast...but he has to take the same kind all week. If I could freeze them, I could do a variety so he has some choices...plus I don't always feel like baking on Sunday evening.

Yes! I freeze muffins all the time too. I also bake up pumpkin bread and banana bread so we have those when we need them. Company comes over suddenly? Just pull some out when they arrive and usually within an hour you can serve coffee & muffins!

Flash freezing is purely a method. Put them on a cookie sheet in the freezer for a couple of hours so they freeze individually. Then, put them in a ziploc bag and store for a couple of weeks. This way they don't stick together.

I do this with biscuits too. Since it's time consuming to make homemade biscuits, I make a lot, flash freeze them and put in bags. That way I can take them out and bake several times without having to make them fresh early in the morning.

Oh, cool! Thanks for the tip. We have a freezer at my business warehouse where we store henna powder when we get in a huge shipment from overseas. It's empty now until we get our next shipment in July. I may have to bring it home and set it up in the garage. Surely by the time I need to return it to the warehouse, I'll have saved enough money to buy one for the house ;~)
