Default My first roasted chicken :)

I have to brag for a moment. I never thought that I could make one of these. I didn't know how easy it is. I made this tonight and it came out perfect. I had to make a side of GG steamer corn w/butter sauce. I have a ton of these to use up.



So here's what I did:

whole 3lb fryer chicken
1 onion
1 lemon
olive oil
rosemary
veggies are optonal



Preheat oven to 350
cut onion in quarters
cut lemon in half
Sprinkle lemon and onion with rosemary and place inside chicken
Rub chicken skin with olive oil and sprinkle with salt and pepper and rosemary
Cook in roaster with a lid for an hour then remove lid for the last hour.
I also placed foil over the wings for the first hour so they would not burn.
Give it a try, you'll love it.

Your chicken looks delicious! I like to throw mine in a crockpot especially if it is still frozen. It sure doesn't get that pretty golden brown color, but in a pinch it works well.

Looks yummy! I use Summer Savory in place of Rosemary. I can't get over how beautiful yours looks!
