We love cruising and feel like it provides a good value for the vacation dollar. We've never done Disney but my sister has twice. (She's a nanny for a family that can well afford to cuise in the Roy Disney Suite.) A Disney cruise sounds VERY well done and popular with young and old alike, but they are also a very premium price.There are other lines that cater to families with children with a less premium price and they do very well. Carnival, Royal Caribbean and Princess come to mind. I've sailed Carnival and Princess one time each, but never with DD. DD has been with us on Royal as young as 20 mos. The right line for you can depend on where you want to go and your kid ages. If you want to study and learn everything you can to have a fabulous cruise (however you decide) I recommend reading the forum/boards at cruisecritic.com. There are boards for each cruise line, each destination, each departure port, and a family board for discussing tips for cruising with kids. It is VERY helpful, especially since it's your first time. You'll get more out of your trip with the right planning, which will help you get the most for your money.
But to answer your specific questions, on cuises meals are included. There are some foods you can opt to pay for (specialty restaurants, fancy coffee, fancy ice cream) but the plain restaurants, regular coffee, and ice cream with dinner will always be included. You will not go hungry. Room service is even included, though you should tip the guy/gal that delivers it a couple bucks.
