Naynay, congrats on the 4 pounds! Whoohoo!
Here's my tally for 1-22-09: coffee: 120 cals 1-1.5 serving Chex Mix: 150 cals 1 large pear: 121 About 2 bites of 'organic' yogurt I threw away (it tasted like cheese instead of peaches? Ugh) 2 1/2 soft taco supremes from Taco Bell: ~600 cals Chocolate bar: 220 cals My total is only in the 1200 range but a lot of fat in there. I don't consider it a great day. My son has an art class from 6:30-7:30, and my dh always comes with us. We have a tradition on Thursday nights to catch dinner and go to Michael's shopping. He pulled into Taco Bell, and ordered me the supreme tacos while I was in the restroom. Afterwards, he pulled chocolate bars he'd bought for me from a fundraiser at school. I was ravenous hungry because I'd spent the afternoon shopping and hadn't stopped to eat. (My dh does this, he doesn't mind my weight one bit, and he regularly brings home stuff like this. One year he brought me home an entire case of Thin Mint girl scout cookies. I had those babies in the freezer for a year!) Exercise: I took the dog on a 3 city block walk. She loved it, but it was uphill in the snow both ways No really, about 1/3 of the route was still covered in 12 inches of snow. I also did just a few minutes of going up and down the stairs. I didn't use any weights; I just used the multiple trips to carry up laundry to the upstairs and stacked it, when I was done, then I put the laundry away. Was only 5-6 minutes. I did drink about 30 ounces of water with benefiber, and I forgot to take a vitamin. Today will be a better day

NayNay congrats on the 4 pounds.
I don't count cals so my yesterday was just consistent healthy choices. Peanut Butter on whole wheat for breakfast box of raisins and a FibreOnebar while shopping Supper was Pinto beans and brown rice. I also stirred up a quick watergate salad with just the pineapple, lite coolwhip and SF/FF pistacio pudding. Had some of that. Didn't get my exercise in like I had planned.

Congrats Naynay!!
Congrats to everyone who is embarking on this journey...just think, anything we are doing to help ourselves today is one more thing than we did yesterday! Today: Malt-o-meal for breakfast having left over salad for lunch granola bar for pm snack homemade chicken noodle soup for dinner (DH feels sorry for me, I have strep throat) No exercise today...just antibiotics!!! |

Churn111~ Sure! I must say that it is a Campbells (gotta give them props) recipe that I converted... I copied the recipe from their site and made changes in (___). I also like it a little more dry (gives it that chicken & dressing taste! IMO) If you have any questions just ask..
Campbell’s Cheesy Chicken & Rice Casserole (changed a little for the lower carbohydrate Lifestyle to be Quinoa Chicken ) From: Campbell's Kitchen Prep: 15 minutes Bake: 50 minutes Stand: 10 minutes Serves: 4 Ingredients: 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup 1 1/3 cups water (I used 1 1/8) I did this to make it a little dryer like dressing! 3/4 cup uncooked regular long-grain white rice (I used a hot cereal mix that contains Quinoa, Coarse Flaxseed, Coarse milled Almond, & Organic coarse Oats. This is what gives it a think dressing like texture. * You can also you these ingred. seperately; I make it at times with just the Quinoa, and it is still good! *You could also use brown rice to make it more like a casserole.) 1/2 tsp. onion powder 1/4 tsp. ground black pepper (I also used a some Mrs. Dash) 2 cups frozen mixed vegetables (Instead I used Carrots, and French-style Green beans to lower the carbs since mixed vegetables has a lot of potato!) 4 skinless, boneless chicken breasts halves 1/2 cup shredded Cheddar cheese Directions: Heat the oven to 375°F. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish. Top with the chicken. Season the chicken as desired. Cover the baking dish. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes.

Thanks e jet. I "tinker" with recipes too.
I usually don't even use the Campbells soup for something like this. I mix up those things you can substitute for "cream of" soups. Occasionally I will put one or 2 cans of the healthy request or low fat ones on the shelf just in case.

I love this thread. I went to the Student Health Center in November & when they weighed me I just about fell off the scale. The nurse had to ask me if I was ok b/c I just stared at the number not believing it was possible for me to have gained so much. After that I started walking as much as I could around the campus instead of taking the shuttle. Our campus is fairly large, made up of 3 mini-campuses. My schedule this semester requires that I walk a good distance to one of my classes & an even further distance when I do my clinical rotations 2x a week. When in the clinic, we rarely sit down. We just found out today that there is another place to park near one of the campuses that we need to be at. We normally cross a very, very busy street that is actually known to be dangerous so I commented that I am going to park in the other area & no one else wanted to park there b/c it was even further our student parking. Well, as far as I'm concerned I need all the extra walking I can do so I will be parking there from now on. Hopefully all the movement will start to take the weight off. I need to get a pedometer to measure how far I walk every day. I think I might throw in a few work outs using my pilates dvds also.

Oh I forgot something.. Some times I use sharp cheddar so I don't have to use as much! It really helps cut back on the fat and cal. without giving up good taste!
