    Default Can I freeze......?

    Theres ricotta cheese on sale here at my local grocery store..I would like to buy extra if I knew I could keep it. Im planning to make lasagne with some but want to have it for later down the road. Prices are going to skyrocket with economy and farmers not getting enough rain and all.Just wanting to plan ahead a little, as we all do. So can I freeze ricotta cheese?

    Well....you can buy frozen lasagna with ricotta in it, so I don't see why not. If you're going to use it for lasagna anyway I don't think it would matter that much. If you use it for something like cheesecake, it might affect the texture. I'm not an expert on this, just my educated guess.

    I looked at the the Sargento website and it says you can freeze it for two months but I honestly think you can probably freeze it for longer. Then again I'm a huge proponent of freezing things.

    Wow I would never have thought of that. I agree with the above posters! I have a bunch of coupons I may not use before I would use that much ricotta.

    Wow thank you for posting this. I am making lasagna today to freeze and my husband asked me to put a layer of cottage cheese in it, but after reading this I think he may have meant ricotta cheese. Or has anyone every used or heard of cottage cheese going into lasagna?

    I'm not a big fan of ricotta so have always made lasagna with cottage cheese (my mom's recipe). My family has been eating this lasagna for 40+ years and not a peep out of anyone about not using ricotta cheese.

    Ricotta vs. cottage cheese in Lasagna is really only personal preference. I use Ricotta because I don't do cottage cheese... but it's great info to have. I will definitely be freezing some ricotta cheese now.

    Thank you for all your input..I am gonna try freezing it..I have used both cheeses, but my dh likes ricotta better..I can get it for 1.49 a carton..which to me is a good deal.
